apr 30, 2020 (thu)......................4人來lunch............叫咗 :

1) smoke salmon salad with beetroot, walnut & apple cider dressing set (hk$88+$10)
-友人叫的
-2個dishes望樣都ok嘅


2) slow cook belly with green pea & carrot risotto set (hk$98+$10)
-友人叫咗餐湯
-1上枱.................賣相幾差吓.................d飯咁大粒嘅?! (個樣好淋咁)...............超大兜...............好少見咁大portion嘅risotto
-pork belly個color又pale
-個sauce又浸到落個risotto到


3) penne tossed with black truffle and veggie set (hk$78+$10)
-我揀沙律...............菜新鮮.............種類都算喺咁............有cherry tomato, frisee, lettuce, arugula, red union
-要讚喺佢個lunch menu難得有1個vegan嘅選擇.............我就order呢個................-低陣食beef wellington嘅內疚感
-我哋湯/沙律未食完..................main dish相繼上枱...............我o咗嘴.............即刻叫佢我哋未食晒...............唔好上個beef wellington...............但後來覆番已入焗爐............ok, fine
-我唔慣食嘢嘅節奏比餐廳control住.............宜家食得有d趕.............否則個main就會凍咗 (lost the best time of eating)
-對我嚟講,第1次見penne喺大tube狀..................我google過...............如果叫cannelloni會比較恰當d…………幸好無煮到港式意粉咁淋
-個pasta調味太輕手 (咁又未至於無味)...............僅有嘅truffle作味道上嘅點綴..............可惜1d truffle味都無..............更遑論鹹甜味
-quite a boring dish in terms of appeal and taste

4) linguini with tiger prawn, garlic & chilli set (hk$108+$10)
-友人叫餐湯
-今餐我無深究友人們dishes嘅味道

5) beef wellington (hk$328)
-呢個要預先留
-因為大家都會試..............所以就4人share
-我order咗medium..............出嚟cut開並無血水.................所以1定唔可以order熟過medium
-serving前.............chef知道我哋喺share...........出嚟同我哋講分2份ok............但分成4份有d難...............我哋叫cut half得喇............我哋之後自己再分
-個pastry color焗得好靚.............亦都薄鬆
-成件beef wellington喺比d蔬菜粒墊高咗...............d sauce無浸住個pastry底
-pastry同牛肉之間.............放咗1片薄嘅parma ham
-個牛肉中心呈pink red...............我無+個sauce食............入口軟,肉質都滑,juicy,有溫和嘅肉味............調味已剛好 (我宜家口味prefer清d,原味d)
-真喺做得好
-beef wellington唔喺1個容易嘅菜式.............但個chef喺well execute


後記
1) 呢餐飯令我迷失嘅地方喺唔同dish出嚟嘅quality可以差咁遠..............如果佢可以煮出咁good嘅beef wellington...............點解其他lunch set會咁港式西餐水準 (喺,價位上其他lunch喺大眾化)...............我好confused.............莫非喺2個chefs去handle??..............但都唔可以分歧咁大...............無可能貴價菜就洗出真功夫...............平價菜就求戀期.................成個positioning/ market segmentation好混亂

2) 喺operation方面............佢哋喺完全無考慮食客han唔handle得切.............好似大排檔/茶餐廳咁經營................總之廚房煮好咪出比你囉.................友人聽到佢同其他枱入座時有提到交枱時間 (但我哋無)..............你想翻枱.............都唔好迫我要速食...............我好怕1樣未食完又上另1碟...............擺到成枱嘢.............擺到d嘢凍埋 (咁咪會唔好食,浪費咗個chef嘅心機囉!)...............我會有壓力咁催自己食快d

問題喺我無預到1間有賣beef wellington嘅餐廳.................會喺速食西餐

3) 今餐喺疫情緩和後..................幫手促進經濟............約人出街食飯嘅第1餐..............雖然我支持黃店..............但味道上都要忠於自己..............fact cannot b distorted to fit one's belief.............我嘅comment全出發於"恨鐵不成鋼"
