因為琴晚又咁夜,今朝嘅早餐喺optional參與,我喺放棄無出去嗰個...........收到友人倆whatsapp問我食唔食蒸包...........有食唔食,罪大惡極...........食 :

1) 蒸菜肉包+泡菜包 (3,500 won)
-友人倆揀咗呢間
-最少買5個............友人揀咗3個菜肉包,2個泡菜包
-佢d包又唔會soggy...........餡都多...........味道唔錯..............尤其泡菜包只喺小辣,惹味d

2) 香蕉奶 x 2 (@1,300 won)
-隨街都可以搵到呢樣嘢
-我第1次飲............ok la

我大約3個星期前想book sat..............但full咗............所以揀今日嚟

1) lunch tasting course 2016, spring x 3 (@55,000 won)
i) 1st amuse bouche x 3
-flounder fish roll, apple, pastry : 個酥皮絲比到好鬆脆嘅口感...........有趣
-deep fried seaweed, mango sauce, abalone sauce, truffle powder, fish roe

ii) 2nd amuse bouche x 3
-cauliflower, egg white custard, egg yolk, abalone slice, sichuan pepper
-液態light mousse texture
-有d鮑魚薄片咬吓

iii) foie gras salad x 1 (+10,000 won)
-foie gras, celery puree, lobster, pistachio, tofu cracker
-個龍蝦肉有點刺身feel
-鵝肝邊喺有d脆口嘢包住
-仲有d時令韓國本地菜

iv) spring x 2
-scallop carpaccio, foraged spring herbs, yihwaju dressing
-面頭橙色微粒喺魚子乾,刨出嚟........個sauce最有heart,味道好獨特...........waiter話有rice wine, yohgurt,仲有d發酵過嘅嘢,olive oil............所以出嚟味道有點似酒味腐乳
-但喺夾落薄片帶子刺身又夾喎,好味呀!
-同樣配1兜時令韓國本地菜

v) seasonal fish & veggie x 3
-steam sea bass, potato croquet, korean chili paste mix spanish style spicy sauce (a spanish place, close to france), marinated squid/ cuttlefish絲 (waiter講咗個英文韓名,我當然唔識啦!)
-呢舊魚juicy,tender,滑,肉質結實...........execute得好好............很原味,食到中等魚味...........從個肉質..................我好doubted呢舊喺咪真sea bass?............因為好多時去到外地,waiter用英文通常介紹d啖啖肉嘅魚種做sea bass
-個辣汁比起傳統韓式嘅辣法.........易handle好多...........味道rich
-另外2個配角味道都唔失禮
-個薯球外表如果可以挺脆多1點更佳
-好like呢碟魚

vi) korean beef x 1 (+20,000 won)
-charred beef tenderloin, truffle, jang sauce, seasonal veggie
-有butternut quash puree, baby kale, korean root veggie, brussels
-友人切咗d比我試
-友人好like呢個牛

vii) duck x 1 (+10,000 won)
-duck breast, sweet & sour sauce, seasonal jang-a-jji
-呢個喺靚仔waiter個人最like
-配以sweet potato puree, beetroot
-仲有兜sauce with pickled blueberry
-友人切咗1/3比我試
-3個肉之中.............我最欣賞呢個.........味道最豐富...........味道組合有創意........功夫亦較另外2個多
-鴨有禽味,唔over...........個皮煎到browning好靚.............件鴨胸做過皮下脂肪切割手術.........睇顏色(rosy pink)已知道無overcook.........肉質嫩.........味道仲有點似海鮮醬嘅甜甜哋醃過佢
-我都唔需要點蘸個sauce

viii) lamb x 1 (+18,000 won)
-charred lamb, doen-jang, veggie ash, celery root, seasonal veggie
-我揀咗羊
-去咗骨嘅羊肉,搓番埋d肉,有點羊脂..........所以都有羊so味,我覺得唔算激,但友人覺得勁
-d肉當然無overcook啦.............嫩滑
-配以celery puree同veggie roll

ix) jang trio x 2
-doen-jang creme brulee, gan-jang pican, gochu-jang black rice, vanilla ice cream, whisky foam
-聽完靚仔waiter喺落order前嘅介紹..........我已經想3個都叫晒呢個..............但佢反建議都試吓1個新嘅spring甜品
-呢個甜品喺無得頂............combination豐富,又creme brulee,又2球雪糕,又有脆米,脆杏仁片............甜度無over..........雖然有幾款"韓醬"嘅元素..........但無搶到甜品嘅定位

x) spring x 1
-coconut anglaise, black vinegar infused pineapple & celery, raspberry sorbet, spring herb powder, cocoa chip
-呢個味道都唔差,喺較refreshing開胃

xi) petit four
-有butternut squash juice top with korean pear juice同rice cake

xii) drink x 3
-我叫咗熱麥茶, 友人叫咗熱mulberry leave茶

後記
-店內環境

-餐廳focus喺保持對韓式醬油 (jang)嘅堅持...........喺個dressing/sauce度............見到佢都infuse咗韓式醬元素.............同d菜用大量本土時令食材

-全餐由頭到尾都無失手............全部都好唔錯.........只喺睇吓有幾多道菜特別好食啫...........如硬要挑剔.........喺3碟肉嘅presentation唔夠fancy/seafood ghost~~~~

-靚仔waiter (高瘦白淨型)介紹同解釋 (我好多嘢問)詳細...........全程好有笑容,好charm...........今餐味蕾同眼睛都食盡好西~~~好sweet好幸福!!!(星星眼心心眼齊晒)

-呢間喺2016亞洲top50餐廳rank得最高(#15)嘅韓國食肆.........實至名歸..........我有諗佢同2015 & 2016 rank#1嘅gaggan有咩距離............我個人覺得mingles嘅lunch相對地樸實d (難度分低d).............無咁玩嘢/playful.......少玩花巧/賣弄technique............presentation未夠fancy/ seafood ghost............其實要試埋mingles嘅dinner............先可以作個apple to apple嘅比較

咁gaggan喺playful得嚟個味道上喺execute到............我只喺唔識欣賞fusion印度嘢嘅甜品啫~~~~

今日天色有d陰...........變相d花都無咁靚.............亦喺人頭湧湧.............大部份嘅櫻都喺白色...........僅1顆喺粉紅色.............當然個個圍住影

呢度呢櫻花竟然有少少除風飄落嚟啦!.........之後食d嘢,再行埋lotte.........返嚟睇夜櫻

之前睇食友嘅遊雞..............知道首爾都開咗..............見到佢嘅評價10分gd............所以今個trip 1定要食因為我鍾意食pancake............尤其hotcake :

1) bills green (7,700 won)
-spinach, cucumber, green apple, ginger, celery, chia and coconut water
-今朝已發現喉嚨腫hing...........吞口水已唔順暢同痛...........又要飲d清熱, 勁維他命c嘅嘢
-唔會有草青味,好易入口............不過飲完對喉嚨都喺無嘜幫助

2) bills house-made lemonade x 3 (@6,600 won)
-我哋喺分咗3次落單
-友人先叫..............佢猛話有成個檸檬咁多
-我先醒覺,飲呢杯啱過5青汁喎............又大杯d...........於是我飲完5青汁後再叫1杯
-酸中帶點甜............又冰涼............啱晒幫我"la"吓條喉嚨同降溫
-飲完條喉嚨喺會清涼咗............舒服d

3) ricotta hotcakes, banana and honeycomb butter (19,800 won)
-我就喺為咗呢個而嚟
-望到後面枱嘅實版,好大份架
-每塊好厚身,雖然有3塊,但我唔會每人分1塊.........咁會破壞咗個口感同滿足度..........所以當蛋糕咁分
-咁樣影個結構相都震撼好多啦~~~
-golden brown, moist, soft, dense, buttery............有香氣..........重點做到咁厚,但1d苦味都無
-見到白白哋嗰d............就喺ricotta cheese
-我鍾意多d syrup配厚pancake............所以問waitress攞多1小jar
-好得!
-好似weekday嘅afternoon tea time時段.............呢個有個1/2 portion offer (1/2$$$$)

後記
-店內環境

-見到前面枱個斯文女仔............食到除晒高踭鞋...........咩玩法?...........辛苦就唔好買咁高啦!

食醬豬手喺我呢個trip另1個must eat............上年試咗出名又多人讚嘅弘大myth jokbal............叫咗蒜蓉豬手............但我嫌佢偏甜............又無菜無配料包住食............朋友suggest呢條街多醬豬手............今年試吓啦 :

1) 豚足 - 細 (30,000 won)
-細都好大碟架..............3個人食剛好,唔會飽到上喉嚨
-豬皮都彈,脂肪滑,肉都鬆唔實
-+菜,+配料,+醬包埋食,都ok好味

後記
-店內環境

-如果下次再去首爾..........會試吓巿廳嗰間出名豬手

-好多blog都寫佢個營業時間喺開到11:30pm.............我哋10pm多d嚟到.............1入去,就話比我哋知收11pm............oh,所以要快快點.............佢都上得好快

連日咁夜瞓...........今朝起身...........我最唔鍾意嘅老友"上呼吸道"又嚟滾攪我...........我要喺喉嚨腫hing嘅初段撳停佢

由今日開始唯有啪天然維c同勁飲大量清水............除咗喺bills內隊咗杯5青汁同lemonade外..............仲有呢杯.........返到酒店就隊~2l水
其實飲暖水喺最適合.........不過唔喺好想用酒店嘅水壼 :

1) 梨+蜜糖汁 (2,000 won)
-地點 : 江南區廳站附近
