aug 14, 15 (fri)....................2人嚟dinner................叫咗 :

1) bread (免費)
-先來1/2件麵包,外crust,內soft,鬆.................暖熱...............但溫度唔算高
-牛油好soft
-ok的
-無諗過食完amuse bouche同第1道菜後................竟然再送來1個brioche...............呢個熱d.............似剛剛焗好.............食到有牛油嘅香氣,鬆呢
-包喺任添...............如果你有本事食

2) amuse bouche (免費)
-有5款唔同嘅迷你小食..............waitress介紹喺代表住金,木,水,火,土...............eye catching.............每樣都decent
-要由左食到右 - quail egg, smoke eel, stock gelee, sweet corn panna cotta, mushroom panna cotta
-味道全部好ok............不過我失手將上湯水晶球跌咗喺枱面上穿咗................我只食到好少............side晒
-而個panna cotta嘅餅底好香牛油味,又鬆化

3) summer 2015| sensualist menu - 6 courses (hk$980)
i) ode to cauliflower
-tomato marinated hiramasa/ cauliflower puree and powder/ almond ice/ avocado cream/ mustard seed/ ponzu gelee
-同樣有好靚嘅presentation............又有食用花...............顏色豐富
-主角就喺比番茄醃過嘅魚生............另外就有多details
-椰菜花味道本身都喺好清淡..............所以元素上有椰菜花............但就要infuse yoghurt落去先比到個味
-作為第1道菜...............可能佢想設計個清d嘅starting..........呢個喺我自己諗啫..........我又唔喺佢心入邊條蟲

ii) the sea
-scallop espuma/ taraba crab meat/ yuzu gelee/ marinated jelly fish/ osetra schrencki caviar/ rice paper
-呢個嘅海鮮味來得溫和..............唔喺好濃嗰隻
-有變成泡沫mousse狀嘅帶子...........1絲絲蟹肉.............魚子醬等..............連張米紙都混有d櫻花蝦物體............所以都有微鹹鮮味

iii) hokkigai clam
-root vegetable mille feuille/ cauliflower black garlic espuma/ fresh water clam sauce
-個北寄貝好甜.............底下有1隻蜆肉
-個黑蒜foam好滑............蒜味都明顯
-另外再有1舊由白蘿蔔同紅蘿蔔拼出嚟
-呢個相對地粗枝大葉咗d............味道喺ok嘅

iv) sakura ebi
-lobster broth/ fregola pasta/ mentaiko/ vin jaune foam/ kombu/ crispy sakura ebi
-我第1時間覺得個碗形狀好特別 (不規則),好型...........好似水牛角
-望落去,已有好多櫻花蝦............
-google過vin jaune喺法國東部嘅1種白酒
-底下仲有好熱熱嘅fregola.............google過喺sardinia嘅pasta..............外形有點似中東嘅couscous............用上龍蝦broth嚟煮............鮮味
-好蝦鮮味嘅1個細米飯 (櫻花蝦,龍蝦上湯,明太子)

v) rose bresse pigeon
-slow cooked breast of pigeon/ filo pastry wrapped fermented mustard green thigh of pigeon/ roasted baby beetroot/ pigeon jus
-只喺用咗鴿胸位,好嫩,好腍,好juicy............禽味中等...........原來用咗slow cook嚟煮
-個bb紅菜頭甜呀
-個filo好薄脆............包住嘅喺鴿肉碎.............仲混有d celeriac粒

vi) honey, milk & chamomile
-homemade wing ho hong kong bee farm honey ice cream/ chamomile white chocolate mousse/ dacquoise/ yogurt meringue/ williams pear cream
-呢個以蜜糖為元素 : jelly, 雪糕
-嘅蜜糖味唔喺好濃嗰隻............只喺清香甜............但都明顯
-蜜餅下mousse喺由白朱古力,洋甘菊同caramel cream做成.............味道喺有點特別嘅輕微herbs味............所以我要問waitress先知有咩
-好精緻.........肯定好人手雕花出嚟

vii) zen garden
-passion fruit marshmallow, jasmine macaron, matcha opera cake, dark chocolate with coconut ganache
-呢個喺2人portion
-好靚嘅日式園藝presentation
-所以連友人無相機食先嘅習慣都用手機影
-有熱情果味綿花糖, 茉莉macaron,抹茶opera,朱古力裡有椰子味醬
-仲有餅乾條同糖餅 (扮石頭), 糖粉 (扮砂地)
-每樣甜品味道都ok的............單喺賣相已殺晒

4) summer 2015| gastronomy menu - 8 courses (hk$1,280)
i) ode to cauliflower

-duck foie gras mousse/ pommery mustard ice cream/ radish/ cucumber ribbon/ pickled portobello mushroom
-由鴨肝整成嘅mousse....肝味溫和..........再配以芥醬雪糕.........當然唔會辛辣啦.........很creamy........幾特別
-之後配搭上radish片,醃過吓嘅大菇片.......同捲埋咗嘅青瓜
-配料無嘜特別,可以ignore


iv) hokkigai clam

-意見如上

v) liquid caesar salad
-liquid caesar salad soup/ pan fried sardine/ green apple and yuzu kosho puree/ jerusalem artichoke puree
-呢個喺將caesar salad打成汁..........微"杰"..........飲到有parmesan cheese味.........幾有趣
-配以個煎咗嘅沙甸魚.............油份都多..........再+個apple jus中和吓

vi) sakura ebi
-lobster broth/ fregola pasta/ mentaiko/ vin jaune foam/ kombu/ crispy sakura ebi
-意見如上

vii) kagoshima beef tenderloin
-kinome sichuan peppercorn paste/ onion puree/ green asparagus/ green pepper/ beef jus
-好soft, tender, juicy嘅tenderloin.....1d筋都無............外表很有grill香
-處理得好

viii) picnic
-yellow peach mousse/ elderflower gel/ raspberry sorbet/ matcha crumble/ citrus gateau/ lemon curd
-ok的

ix) zen garden
-passion fruit marshmallow, jasmine macaron, matcha opera cake, dark chocolate with coconut ganache
-意見如上

5) drink
-包杯drink.......友人叫了紅茶+奶


後記
1) table setting

2) 呢度都多人嚟..............所以難d book到next week................最好預2星期前訂位................環境比較舒服relax.............光線唔暗.............所以唔喺走情調路線...............都多group gathering............反而2人booking幾少

味道上佢唔喺差..............presentation都算精緻............service,食物介紹都好詳細.................但就無嘜邊道菜會有驚喜

3) 知道友人工作上嘅變化.................祝佢快d搵到未來方向
