take 5 - prawn omelette (my family style)

feb 23, 2023 (thu).............try my house recipe of prawn omelette again

introduction
- this is what my parents like to cook for us

main ingredients
- prawns <-- better buy prawns that are with shell, taste better
- 2 x eggs
- onion
- coriander
- [fish sauce - if you wanna thai/ vietnam twist)

steps
1. sliced onion, chop coriander

2. pan fried onion till soft............nice to give it a bit brown

3. beat eggs...........add a pinch of salt (or fish sauce if you fancy thai/ vietnam flavor)

4. add cooked onion into egg batter

5. defrost frozen prawn and deshell

6. use kitchen paper to absorb excess water content

7. cut prawn into halves and smaller.................clear the gut if any.............season with a pinch of salt and white pepper powder

8. pan fry prawn till almost done

9. add cooked prawns and coriander into egg batter..........mix well

10. even out the mixture into pan (keep as flat as possible)..........pan fried till golden brown

11. flip over and same............pan fried till golden brown

12. done, plating


taste
-i like the golden brown of this attempt (i used to be impatient and cant stay long enough to get such browning) 
- raw prawns with shell tastes so much better than cooked type............much oceanic flavor and firmer texture
-go so well with rice (photo : jasmine rice)


areas of improvement
-fragrance of coriander is too gentle (coriander from aldi is no good).............next time try fresh coriander in pot from m&s..............coz friend told me its strong and can grow 1 more crop after cut
