take 2 - stir fried prawn with shell in tomato sauce

introduction
- this is 1 on hong konger dishes to serve guest or during big festive family feast
-oceanic favour of shrimp is the personality of this dish
- savory and sweet sour sauce coated on the shell of prawn brings up your appetite

main ingredients
- 7 x shrimps (better with head and shell............but i can only find deheaded raw shell prawns)
- 1 clove garlic
- few shallot
- spring onion
- pinch of rice wine

sauce ingredients
- 1.5 tablespoon ketchup
- 1.5 tablespoon ok sauce (replace by worcestershire sauce coz available)
- 1 teaspoon soy sauce
- 1/2 teaspoon dark soy sauce
- 1 teaspoon sugar (i skip it coz sweetness from ketchup is good enough dun wanna over sweet)
- water ~20ml


steps
1. absorb excessive water

2. diced spring onion, shallot and garlic

3. mix all sauce ingredients

4. heat up pan...........when very hot add oil (more than usual)............then put in prawns............stay untouched for ~2 mins

5. flip over...........stay for another 2 mins

6. set aside

7. using remaining oil.............add garlic and shallot..........until fragrant

8. sprinkle pinch of rice wine

9. add sauce

10. when sauce slightly thickens...............add prawns

11. allow time for sauce to soak in prawns

12. when sauce further reduced,...............add spring onion

13. done

-best pair with rice

-i am very happy with this attempt
