take 2 - stir fried rice noodles (veggie version)

introduction
- it is a popular traditional breakfast (but with much simple ingredients)
- ingredients is highly flexible (usually depends on whatever available in your fridge)
- my parents used to do a stir fried rice noodles (little prawns, bbq pork, pickled veggie) which is my favorite

main ingredients
- rice noodles (better not to use very thin type)
- dried mushroom (fresh mushroom is also fine)
- bell pepper
- bean sprouts
- egg
- coriander
- salt
- oyster sauce
- soy sauce


steps
1. boil water

2. put in rice noodle.............then turn off the heat and let it soak for 1 min

3. drain it

4. cover with either clean towel/ lid

5. soak the dried mushroom in boiling water.............then turn off the heat and leave it till totally soft

6. ready all the ingredients

7. stir fry mushroom

8. then add bean sprout, bell pepper..............add a pinch of salt..............stir fried until slightly soft..............then place it to a plate first

9. make a scramble egg (~70% cooked)

10. heat up the pan with oil..............put in rice noodle (quite stick together and padded up)............let it sit until light brown

11. flip it over and do the same

12. use chopsticks to loose off the rice noodles

13. add in all the cooked ingredients (except egg)

14. add in oyster sauce, soy sauce and coriander............mix them well

15. done


taste
-i like the golden brown of this attempt (i used to be impatient and cant stay long enough to get such browning) 
- raw prawns with shell tastes so much better than cooked type............much oceanic flavor and firmer texture


areas of improvement
-fragrance of coriander is too gentle (aldi is no good)........next time try fresh coriander in pot which said to be strong in aroma and can grow 1 more crop
