take 2 - tomato with scramble egg

aug 17, 2022 (wed).............make a 2nd attempt.........but this time cook in scrambled egg...............just so happen come across a you tube video.............i like the reason why she fries tomatoes 1st

introduction
- it is a typical household dish in hong kong/ china
- kids love it
- almost each family will have her own way/ style in cooking this dish
- mine will use at least 2 different varieties of tomato (please dun use salad tomato which is not suitable for this dish)
- in order to give the natural citrus and sweetness flavor............i will buy good quality tomato (find the right variety) with vine, in bright red color

main ingredients
- sugardrop tomatoes <-- my fav tomatoes species
- large vine tomatoes
- 2 x eggs
- brown sugar

steps
1. add a pinch of salt into the 2 eggs

2. cut tomatoes into half/ smaller sizes

3. pan fried the tomatoes and add a little bit of water (you can skip adding water if you dun want much juice for the outcome) & brown sugar + salt............until they are totally soft

4. leave aside

5. clean the pan completely otherwise any residue (sugar, tomato juice) will probably caramelized the egg or contaminate egg color

6. fry eggs

7. quickly stir and switch to medium heat

8. while egg still a little runny, add in cooked tomatoes and stir it a bit so that egg can blend into the tomatoes

9. done, plating

taste
-taste sweet with natural citrus is the characteristic of this dish
-rich in tomato flavor, juicy
-goes well with rice (photo : thai rice)..........perfect match


areas of improvement
-i am quite happy with this version (scrambled egg rather than fried egg)..............at least i see a little integration of the egg and tomatoes
-i think the scrambled egg can be more runny and soft...............since i use 2 eggs only.............next time tune down the heat earlier
