introduction
- thai food is always characterized by its dimensional flavor with refreshing lime sour and sweet............rich and stimulate your appetite
- fish sauce, lime and tamarind are usually the soul of thai dishes
main ingredients
- steak 195g (better not use thick one).......this time i use sirloin cut
marinated sauce
- 1 clove x garlic
- 1/4 teaspoon x black pepper
- 1/2 tablespoon x lime juice
- 3/4 tablespoon x oyster sauce
- 1 tablespoon x soy sauce
- 1 teaspoon x sugar
- 1 tablespoon x oil
dipping sauce
- toasted rice powder (i skip this coz i cant find this ingredient)
- 1 tablespoon x tamarind paste (my tamarind paste is way too thick/ dense, therefore i diluted by some water)
- 1/2 tablespoon x fish sauce
- 1/2 tablespoon x lime juice
- 1/2 tablespoon x palm sugar
- chili flakes
- 1 tablespoon x shallots
- coriander (can be replaced by green onion/ parsley/ mint)
steps
1. finely chopped/ grind the garlic.............then add in all remaining marinated sauce ingredients............last put in some oil and mix well
2. user kitchen paper to absorb extra moist from the steak
4. this time i use the pressure cooker............saute function
5. pan sear steak each side for 1-2 mins
6. pan seared the other side and the sides............so steak juice will be locked inside
7. put seared steak on foil

taste
-very delicious..............way lot better than last time
-may be the result of following the portion of each seasoning and better beef cut
-seasoning just right............so much flavorful.........you have citrus sour, different layer of sweetness & savory, a little bit of heat...........so good
-not burnt this time, good browning effect
-only failure on the doneness of the meat.............i target medium.............but it turns out to be well done...........i try to remedy it by slicing it much thinner.............luckily the meat is soft and not tough nor chewy
areas of improvement
-reduce oven baked time to 5 mins (if i use the pressure cooker saute function again)

-buy a cooking thermometer so that it tells the doneness of the meat
