-波士頓龍蝦有膏,肉都有微鮮,都不錯,而且供應無斷過,會不時refill,無欺場
-3文魚有3款分別喺smoked, gravlax, baltik............當中我最期待嘅喺baltik,因2007年當中環ritz carlton就快要拆卸前去食buffet........當時第1次食到baltik...........喺好滑身,有光澤嘅橙色,望落去見唔到紋理,入口肉質明顯比平時食到的黏口,密度高 ,很rich3文魚味...........令我印象深刻,到宜家仲記得............不過呢度嘅baltik
色澤暗啞,肉質同普通3文魚無分別.......根本談不上什麼黏口,密度高,3文魚味濃..........質素同ritz carlton比...........差之1000里.........我寧願食有dill草醃過嘅gravlax好過
-蠔初段時有南非,澳洲同美國,按食友嘅評價,南非嘅有海水味,又爽口............因為我嘅quota只可以食到2隻蠔,所以全揀咗南非的..........後期南非的已無晒,剩下澳洲的.........蠔已開好,所以我攞之時,都有用叉測試過隻蠔嘅新鮮度反應........先揀咗2隻南非蠔
..........質素不錯,可惜蠔手技術很差..........全枱食友嘅蠔,每隻總有蠔碎,只差異在多定少咁解...........我哋笑言蠔手要再培訓..............hahahaha
-alaska蟹腳對我嚟講,ok啦..........因為之前喺norway食過新鮮劏完即烚的king crab...........緊喺有好大分別啦...........hahahaha
-螺好大隻,肉質彈,鮮味薄,但都ok的
-bayonne ham已1片片薄切好,亦有即場手切,不過師傅技術麻麻,手切出嚟很厚身,聽食友講入口太chewy..........所以我全食已切好嘅1片片薄的.........火腿嘅鹹香味after taste不足,所以月份計應該好young.........但都ok不錯的
