introduction
- it is my family favorite dish............usually most restaurant is doing stir fry broccoli with scallops
main ingredients
- scallop
- celery
- 1/4 of 3 color bell peppers
- 1/4 onion
- salt
- garlic
- ginger
- shaohsing chinese cooking rice wine (made in taiwan)
steps
1. defrost scallop (coz mine is frozen stuff)...........the correct way of defrosting frozen seafood is to take to room temperature and quickly wash by water............then leave it on a drainer so that water drips out without soaking the seafood
2. use kitchen paper to absorb extra water content..............very important if you want a caramelized browning
4. finely chopped garlic, sliced ginger and 3 color peppers
5. sliced onion and celery
6. when oil is ripping hot............continue high heat...............put in scallops............leave it for <1 min
7. flip over............scallop not overcook is more important than browning effect
9. add oil.............stir fry garlic and ginger until fragrant
taste
-better pair with jasmine rice
-scallop is juicy and tender.............not a single close to overcooked
areas of improvement
-very happy with this attempt
-perhaps cut celery in longer strip instead of chopping into small pieces
