take 6 - bbq baby ribs by slow cook

introduction
- spare ribs is a typical amercian dish.............occasionally i would fancy to eat some
- not easy to find one that suits my taste and well executed here
- but i dun want to cook from scratch in oven..............coz cant imagine how huge energy will be used ($$$ for energy is very high).............therefore looking for a short cut of using instant pot/ slow cook
- watched quite a few videos and finally find this one which looks promising
- i like the rub and sauce are making from scratch

main ingredients
- baby ribs

rub ingredients (based on 1 full rack)
- 1? tablespoon paprika
- 1/2 tablespoon brown sugar powder
- 1/2 tablespoon kosher salt (reduced to 1/2 tablespoon coz personal prefer light seasoning)
- 2 teaspoon granulated garlic (replaced by garlic powder coz it's available)
- 1 teaspoon onion powder (replaced by granulated onion coz it's available)
- 1 teaspoon ground black pepper

sauce ingredients (based on 2 full racks)
- 3/4 cup ketchup
- 6 tablespoon apple juice
- 2 tablespoon molases (replaced by gula melaka coz it's available and reduced to 1 tablespoon)
- 2 tablespoon apple cider vinegar (replaced by white rice vinegar coz it's available)
- 2 tablespoon worcestershire sauce
- 1 tablespoon mustard
- 1 teaspoon ground black pepper
- little liquid smoke
- 1 tablespoon rub mixture above

steps
1. use kitchen paper to absorb all excess water content

2. remove membrane of baby ribs

3. ready the rub mixture base on the above rub ingredients

4. rub the rub mixture all over the ribs

5. put the ribs vertically inside the pot............wider side down the bottom

6. select slow cook function/ rib mode.............low temperature for 4 hours

7. mix all sauce ingredients

8. cook it (low - medium heat) for 10 mins...........so the sauce will be reduced a bit thicker

9. apply the cooked sauce onto the cooked ribs

10. preheat oven at 250°c

11. put in top level............switch to grill mode for 4 mins

12. done


taste
-pair with blanched french beans
-immense flavor of the sauce (bbq, right sweetness, rich, little smoky), meat tender............bones easily off
*baby ribs bought from costco and quality is superb
-i am quite satisfy with this attempt...............so as my 2 friends


areas of improvement
-need more grilling effect (ie grill marks)..............according to this oven setting...........grilling function has to turn the knob to level 3
-the sauce over the ribs shall be dried up a little bit
-the taste of this recipe is exactly what i want...............but not sure about methodology
-i saw another you tube video who cook it slightly different (shorten slow cook time..........drain the meat sauce off the pot...........coat the sauce on the ribs and then slow cook again for an hour)...........gonna try later if it makes a difference
