introduction
- wanna try cooking western dishes
- easy to cook..............prefer baked in foil than deep fried
main ingredients
- cod (or any of your preferred fish fillet)
- carrot
- enoki mushroom (optional, video use leeks)
- black pepper
- salt
compound butter
- unsalted butter
- grated lemon zest (i replace it with lemon salt coz available)
- minced garlic
- finely chopped fresh thyme (i replace it with spring onion coz available)
- salt (i skip this coz i use lemon salt)
- black pepper
steps
1. grind coarse lemon salt into powder
3. first season carrot and enoki mushroom with salt and black pepper.............mix well
4. prepare compound butter according to ingredients above
5. season fillet with salt and black pepper
6. put the seasoned carrots and enoki mushrooms on foil...........add 1-2 tablespoon of water
7. place a fillet on a bed of veggie.............then top with a generous portion of compound butter
8. fold up the foil and seal up 3 sides
9. preheat oven at 230°c
10. put in lowest level............switch to top & bottom heat mode for 15'
11. add some grinded fresh herbs, lemon zest, little minced garlic and lemon juice.............done
taste
-juicy dish, sweet carrot............right seasoning..............butter goes super well with enoki mushrooms
-personally i like enoki mushrooms than leeks
-frozen cod fillet from costco is just so so
areas of improvement
-i am quite satisfied with this attempt
-try other cod brand/ fish type fillet
