take 7 - hong kong style french toast

mar 6, 2023 (mon).............guess it is almost 7th attempt

benchmark video (you tuber職人吹水) : https://www.youtube.com/watch?v=CxjB_6QhA0s

introduction
- it is a very typical afternoon tea option in cha chaan teng (hong kong style cafe) in hong kong

main ingredients
- white bread in thick cut (~2cm) x 4
- 3 x eggs
- peanut butter
- butter
- honey
- gula macalcca syrup <-- can be replaced by syrup/ condensed milk/ honey/ maple syrup

steps
1. cut off 4 sides of white bread

2. beat the eggs.............add a pinch of salt

3. spread peanut butter (smooth/ crunchy type..............thin/ thick.............up to your preference) on 1 side of the bread

4. weather now here is cold and honey is solidified.............have to boil hot water to liquify honey

5. then spread honey on the other side of the bread............(optional coz authentic hong kong style french toast do not add honey)..............but i thought honey will give another layer of sweetness

6. soak all sides of the bread into egg batter for no more than 1 min (coz the white bread here is still not stiff enough, otherwise soaking too long will make the bread soggy)

7. pan fry the toast top, bottom and 4 sides until brown...........since i only cook for myself and no guest waiting...........i have time to pan fry it longer (no pressure) till it gives the right browning

8. at last 1 min, turn up the heat................to make the toast more brown and expel extra oil absorbed by the bread...............will make the outer slightly crispy/ crunchy (better texture)

9. plate the toast............add a thick cut butter on top.............pour in syrup (authentic way).............1st round i try maple syrup

10. 2nd round...............i add gula malacca syrup............it is a very popular brown sugar in singapore/ malaysia

taste
-thick cut bread loaf here is different............in general they are ~1.5cm thick..........it is not thick at all............finally get this 2cm thick that looks like hong kong style
-distinct peanut butter taste and clear sweet
-i am quite satisfy with this attempt...............coz gula malacca has its own character flavor
-if i got the right maple syrup (rich and intense)..............then it would be quite difficult for me to choose which 1 i could opt for
-local friends are very interested in gula malacca perhaps 1st time try it

areas of improvement
-fully happy with this attempt
