introduction
- one of popular dishes in hong kong during summer season
- but not many restaurants offer this dish...........usually find in small local restaurants
- easy to cook
main ingredients
- winter melon
- 3 x dried scallop
- 5 x prawns
- 4 x dried mushroom
- pork
- spring onion
- chicken stock/ sea kelp stock packet
- salt
- white pepper powder
- shaohsing chinese cooking rice wine (made in taiwan)
- sesame oil
steps
1. soak dried mushroom and dried scallop in boiling water for hours till soft
3. diced prawns and season with pinch of salt, white pepper powder and sesame oil
4. absorb excess water...........diced pork and season with pinch of salt, rice wine and soy sauce
5. diced winter melon, mushroom, shredded dried scallop, chopped spring onion
6. boil 600ml water.............put in 2 packets of sea kelp stock
7. boil for 3 mins..............take out sea kelp stock packets
9. after boil up again............add winter melon and mushroom
10. till winter melon fully transparent and absorb flavor of stock (at least 15 mins)
11. add pork............after boil up again and cook for 3 mins, add prawns and cook for 2 mins
12. sprinkle spring onion

taste
-separately cooked rice (slightly reduced the level of water to make it more sturdy) and pour in winter melon seafood soup
-have not had winter melon for so loooong..............finally find where to buy local produce winter melon............it has its splendid fresh flavor
-the seasoning of this time is right..............from soup base to every ingredient carry its own flavor.............making the dish flavorful
