stir fry prawn with scramble egg

introduction
- it is a popular dish in hong kong
- easily found in many restaurants including cha chaan teng (ie small local restaurant)
- simple but tasty

main ingredients
- 5 x prawns <-- better buy prawns that are with shell, taste better
- 2 x eggs
- spring onion
- salt
- white pepper powder
- cornstarch

steps
1. defrost frozen prawn, deshell and devein

2. use kitchen paper to absorb excess water content

3. optional to cut big prawn into halves (but i like to keep it big coz save work lol).............season with a pinch of salt and white pepper powder

4. last add 1/4 teaspoon cornstarch and mix well

5. put in the fridge first

6. add a pinch of salt into 2 eggs

7. beat up egg thoroughly to allow more air gets in

8. chop spring onion

9. pan fry prawn till almost done

10. add cooked prawns and chopped spring onion into egg batter..........mix well

11. heat up the pan...............when hot add oil (slightly more than usual)

12. when oil turns very hot...............pour egg mix into pan

13. switch off.............use remaining heat to slowly stir fry egg mix but avoid sitting too long coz will overcook


taste
-perfect to pair with jasmine rice
-this is my lunch box today
-just right seasoning for myself
-egg not overcooked yet not runny (highly personal preference)


areas of improvement
-this prawn brand does not give firm texture and oceanic flavor........will make another dish to verify
