take 7 - 'show me your love' rice

introduction
- behind the gimmick name, it is indeed diced pork in thick sweet corn sauce with rice
- it is a very typical lunch option in cha chaan teng (hong kong style cafe) in hong kong
- in general, we have 2 different ways of cooking the sauce - clear sauce and creamy white sauce (add butter and flour)
- this recipe goes for natural clear style using fresh sweet corn coz personal persistence and dun like richness/ overwhelming taste bring by butter
- the gimmick name comes from pronunciation, sweet corn diced meat in cantonese sounds like 'show me your love'

main ingredients (2 servings)
- pork ~200g (i use pork shoulder steak from costco)
- 1 x sweet corn
- egg
- salt
- bonito dashi stock powder (optional)


marinated sauce ingredients
- 1 tablespoon x egg
- 1/2 tablespoon x flour
- 1/2 tablespoon x corn starch
- 1/2 tablespoon x soy sauce
- a pinch of chicken concentrate sauce (i replace by oyster sauce)
- a pinch of salt
- a pinch of sugar
- a pinch of white pepper powder
- 1/2 tablespoon x oil <-- very last step

steps
1. use kitchen paper to absorb all excess water content

2. diced pork (not too tiny)

3. mix marinated sauce according to the ingredients above <-- exclude oil which wait till last marinated step

4. add diced pork and mix well................leave it for 10 mins for meat to absorb marinated sauce

5. if all marinated sauce been absorbed.............add 1 tablespoon of water

6. once water also fully absorbed by meat.............add oil..........mix well and fridge it for about 4-5 hours if possible

7. cut flesh out of sweet corn............coarsely chop them so to have bigger and smaller bits of sweet corn

8. poach diced pork into boiling water for ~2 mins

9. strain it

10. ready corn starch liquid (water mix with corn starch)

11. put sweet corn in boiling water for few mins

12. add diced pork and cook for few more mins to release all flavor..............then season with salt/ bonito dashi stock powder

13. add corn starch liquid to thicken the sauce

14. last tune down heat..............add in egg....................keep stirring

15. done


taste
-to echo with gimmick name, shape the rice in heart shape............surrounded by diced meat and sweet corn sauce
-coz sweet corn here is not super sweet type.............sweetness is subtle
-but pork is very tender and lightly seasoned
-quick and easy dish to cook


areas of improvement
-i am happy with this attempt
-but can try adding bonito dashi stock powder next time
