take 3 - dried scallop tofu soup

introduction
- one of popular soup in hong kong's chinese restaurant
- style of soup is adding corn starch to thicken texture (western use cream to achieve the same)
- easy to cook

main ingredients
- dried scallop
- prawns
- dried mushroom (fresh mushroom is also fine)
- tofu
- vegetable stems
- egg
- spring onion
- garlic
- bonito dashi stock powder (optional)
- salt
- white pepper powder
- sesame oil
- shaohsing chinese cooking rice wine (made in taiwan)

steps
1. soak dried mushroom and dried scallop in boiling water for hours till soft

2. defrost prawns............absorb excess water

3. diced prawns and season with a touch of salt, white pepper powder and sesame oil

4. chopped and diced the other ingredients

5. stir fry garlic first until fragrant

6. add prawns until half cooked (turned a bit orange red)

7. add mushroom, vegetable stems

8. add dried scallop

9. add a touch of shaoxing wine

10. add water and pinch of bonito dashi stock powder (can be replaced by chicken broth) until boil up and all flavors released..........then season with a pinch of salt (i skip it coz bonito powder gives right savory already) and white pepper powder (optional)

11. add tofu until boil up

12. add corn starch liquid (liquid scoop up from the soap is fine) until your preferred thickness

13. turn off heat and add egg white (keep stirring)...................last sprinkle spring onion on top.............done


taste
-natural sweetness from dried scallop
-adding bonito stock powder makes the soup taste a lot better
-a healthy and easy soup to cook
