introduction
- it is one of korean signature dishes
- usually with either pork or beef..............but i would like to make a veggie version
- it is quite a time consuming dish to cook

main ingredients
- bean sprouts
- carrot
- courgette
- turnip
- spinach
- egg
- sesame seed
- honey
- sesame oil
- korean spicy powder (replaced by japanese spicy powder coz available)
- fish sauce
- rice
- garlic

pairing sauce ingredients (optional)
- 1 tablespoon korean chili paste (self adjust to your preference)
- 1 tablespoon mirin
- 1 teaspoon sugar (self adjust to your preference)

steps
1. thinly slice carrot, courgette (without centre seeds) turnip and minced garlic

2. add a pinch of salt into turnip...........mix it well.............let it rest for 10 mins

3. soak and clean up bean sprout

4. drain it

5. blanched bean sprouts in hot water for 1-2 mins

6. drain it and set aside

7. blanched spinach in hot water for 1 min

8. put in cold water..............then drain it

9. add oil in the pan.............put in courgette.............stir fry in high heat for 1 min............add a pinch of salt..............set aside for later use

10. add oil in the pan.............put in carrot.............stir fry in high heat for 1 min............add a pinch of salt..............set aside for later use

11. add pinch of salt, very little raw minced garlic, sesame oil and sesame seeds to bean sprouts...........mix well

12. squeeze water out of spinach.............chop in half.............add pinch of salt, very little raw garlic, sesame oil and sesame seeds...........mix well

13. squeeze water out of turnip.............add red pepper powder, fish sauce, tiny bit of honey and sesame seeds...........mix well

14. mix pairing sauce in the saucepan

15. simmer it in low heat till seeing bubbles

16. set aside for later use

17. fry a sunny egg............sprinkle a pinch of salt (optional)

18. ready a plate of rice

19. top with spinach, bean sprouts, carrot, courgette and sunny egg

20. add some sesame oil,  sesame seeds, pairing sauce.................done

taste
-all ingredient taste very natural
-because i mix the pairing sauce well with all rice and ingredient together............therefore pairing sauce is the focus which gives quite spicy, savory, sweet and some wine flavor
-the pairing sauce finally taste authentic
-but if you dun go with pairing sauce, you will have to consider giving a stronger seasoning in order to give the dish some flavor

areas of improvement
-quite happy with this attempt
