take 2 - pork & fresh pineapple with black bean sauce

introduction
- some asian dishes add fresh seasonal fruit into stir fry
- pineapple is a popular choice eg pinapple fried rice, stir fry beef slices with pineapple, sour & sweet pork nuggets
- this time, i pick the easiest dish.............adding pineapple when stir fry pork
- because pork here generally carries an unpleasant flavor (in my taste).............therefore i twist the traditional cooking way by adding fermented black bean sauce...........that strong black bean sauce will fully cover the unpleasant flavor from pork
- hence if pork in your region does not have unpleasant smell.............you can skip fermented black bean sauce and stay with more original flavor of each ingredient

main ingredients
- 1/4 x fresh pineapple (you can use canned pineapple)
- pork (beef is commonly used as well)
- 1/4 x red bell pepper
- 1/4 x green bell pepper
- some onion
- 2 teaspoon black fermented bean sauce
- garlic


marinate sauce ingredients
- 1.5 teaspoon soy sauce
- 1/3 teaspoon chicken powder (replaced by oyster sauce + pinch of sugar)
- 1/2 tablespoon cornstarch
- 1 teaspoon wine
- little oil


steps
1. use kitchen paper to absorb all excess water content

2. sliced/ diced pork

3. add marinated sauce into diced pork and mix well................leave it for at least 20 mins for meat to absorb marinated sauce

4. cut bell pepper, onion in wedges and diced garlic

5. cut pineapple in wedges

6. add oil.............heat up the pan...............when it is real hot.............pan fry diced pork.............stay at least 30 seconds not moving it............let outer cooked..........flip over............keep high heat until they get some browning color

7. just cook it to almost done............set aside

8. add garlic and black fermented soy bean sauce.............low to medium heat.............stir fry until fragrant

9. add bell peppers, onion..............pan fry till your preferred texture..............then add little wine

10. add back diced pork..............mix and pan fry


11. add back pineapple..............mix and pan fry until pineapple is hot and pork is done

12. done


taste
-best pair with rice
-fresh pineapple brings natural sweet and mild tangy flavor to the dish
-slight crunchy bell pepper adds texture
-coz strong and slight salty of fermented black bean sauce complimented to the contrast of sweet pineapple creates a good chemistry (similar to salted caramel or chocolate with sea salt)
-it is a good decision to add in fermented black bean sauce giving its special aroma and uplift the sweetness from pineapple


areas of improvement
-i am very satisfied with this attempt
-cut pineapple in smaller wedge coz it takes quite some time to turn them as hot as other ingredient
