take 2 - shrimp with stir fried vermicelli

introduction
- shrimp is always a good friend to vermicelli/ thin type rice vermicelli
- you can play around with seasoning to make it asian country specific.............eg add in lime juice, fish sauce, chili to make it thai/ vietnam style cuisine 
- i picked a taiwan you tuber........so this recipe is more taiwanese style (not spicy, focus on taste of soy sauce and balance sour flavor from black vinegar)

main ingredients
- 7-10 x shrimps (mine is no head)
- shrimp head/ shell <-- best to have shrimp head coz tomalley contains delicious/ distinct taste and creamy texture
- 100g x vermicelli (you can use glass noodle)
- garlic
- onion (replaced by shallot coz available)
- bits of bell pepper (optional only giving color to the dish) 
- bits of carrot (optional only giving color to the dish)
- chinese celery (skip coz i cant find it here)
- spring onion/ cilantro

seasoning ingredients
- 1 tablespoon dried scallop soy sauce (replaced by soy sauce + maggi coz available)
- 1 tablespoon oyster sauce
- 1 tablespoon rice wine
- 1/2 tablespoon black vinegar
- 1 teaspoon sugar
- pinch of sesame oil
- pinch of salt and pepper powder


steps
1. soak vermicelli in cold water until soft

2. drain and slightly cut vermicelli

3. add pinch of soy sauce to give some color

4. add some oil so that vermicelli will not stick on pan

5. use kitchen paper to absorb excess water content

6. minced garlic, slice shallot, julienne carrot, red and green bell pepper, chop spring onion

7. mix seasoning sauce

8. heat up pan..............when hot add a bit more oil

9. when oil hot..............add shrimp head & shell in low-medium heat

10. till shrimp turn orange with intense fragrant.............scoop out shell

11. add shrimp and stir fry till almost done

12. take out shrimp for later use

13. add diced shallot, spring onion (white part) and minced garlic to stir fry

14. add carrots

15. add bell pepper

16. add vermicelli

17. quickly stir fry and mix

18. add shrimp and then seasoning

19. when all mix well..............add spring onion (green part)

20. done


taste
-dish looks colorful
-texture of vermicelli is good without turning too soft
-vermicelli with well balanced flavours coz fully absorbed the seasoning sauce
-shrimp is firm


areas of improvement
-i am very happy with this attempt
-in order to result in more shrimp oil, next time pan fry shrimp heads and shell in low heat
