introduction
- i learn this dish from you tube
- teriyaki sauce is very popular in japanese..............readily made teriyaki sauce is easily found in supermarket
- it goes well with any meat..........usually chicken
main ingredients
- salmon fillet
- flour
teriyaki sauce ingredients
- 1 tablespoon soy sauce
- 1 tablespoon japanese cooking sake
- 1/2 tablespoon mirin
- 1/2 tablespoon sugar
steps
1. use kitchen paper to absorb all excess water content
3. prepare teriyaki sauce by mixing all ingredients
4. coat with flour (thin layer) just before pan frying them
5. heat up some oil...............till very hot
6. put in salmon..............skin down for ~2 mins (skin turns golden brown and crispy)
7. pan fry the other 3 sides in high heat.............each side ~30 sec (no more than 1 min/ side if you dun like overcooked salmon)
9. pour in mixed teriyaki sauce
10. let high heat reduces and thickens teriyaki sauce
11. keep rolling salmon fillet from time to time so that each side coated with teriyaki sauce
12. when teriyaki sauce reduced and thickened to your preferred texture............switch off
13. done

-perfect to garnish some green (i use asparagus this time) and pair with japanese rice (optional to sprinkle with some black sesame seeds)

-fillet not seriously overcooked, acceptable, not too bad, glazed with teriyaki sauce, succulent
-teriyaki sauce with just well balanced savoury and sweetness.......come with a subtle taste of wine/ fermented aroma
areas of improvement
-i am quite happy with this attempt
-stay with no more than 1 min per side when pan frying salmon fillet --> hope getting a more tender texture
