take 4 - stir fry rice noodle with fish sauce (veggie version)

introduction
- it is a popular traditional breakfast (but with much simple ingredients)
- ingredients is highly flexible (usually depends on whatever available in your fridge)
- my parents used to do a stir fried rice noodles (little prawns, bbq pork, pickled veggie) which is my favorite

main ingredients
- rice noodles
- 3 color bell pepper
- carrot (you can replace it with meat/ seafood and make non veggie version)
- egg
- bean sprout
- shallot
- chinese celery/ chinese chives (replaced by spring onion coz i cant find it here)
- salt
- oyster sauce
- fish sauce
- maggi/ soy sauce

steps
1. sliced bell pepper, carrot and spring onion

2. wash and drain bean sprout

3. boil water

4. put in rice noodle.............then turn off the heat and let it soak for 1 min

5. drain it

6. cover with either clean towel/ lid..............take time to fully cool down

7. cut rice noodles into half

8. heat up the pan to hot...........add slightly more oil..............put in rice noodle (quite stick together and padded up)............let it sit until light brown

9. flip it over and do the same

10. use chopsticks to loose off the rice noodles..............set aside for later use

11. stir fry bell peppers, carrot and shallot for ~1 min

12. season with salt (for me intentionally put in more salt coz i habitually light seasoned)..............put it aside for later use

13. beat 2 eggs...........add a pinch of salt

14. add oil............pan fry it till ~70% cooked

15. add rice noodle...........mix well and break egg sheet into bits............keep low-medium heat

16. add bean sprout...........mix well

17. add fried pepper...........mix well

18. add 1 tablespoon oyster sauce............mix well

19. add spring onion

20. turn off heat..................add 1/2 tablespoon fish sauce (depends how salty is your fish sauce and portion of rice noodle)............add 1/2 teaspoon maggi/ soy sauce

21. done


taste
-while dish is dry with the fragrance of fish sauce
-finally get the right seasoning without taste bland


areas of improvement
-i am happy with this attempt
-suspect another fish sauce may give even richer aroma and taste
