take 2 - hot style japchae (stir fry korean glass noodle) veggie version

sep 16, 2022 (thu).............make a 2nd attempt.............for a more authentic korean cooking steps


introduction
- it is a very popula korean dish
- japchae means mixed vegetables...........but it usually goes with meat
- it can be served hot or cold..............i prefer it hot and veggie 

main ingredients
- korean glass noodle
- egg
- spinach
- dried mushroom <-- can also use fresh mushroom
- carrot
- garlic
- onion
- sesame seeds
- sesame oil
- beef marinate sauce
- mirin
- soy sauce
- sweet red pepper paste sauce
- sugar

steps
1. soak dried mushroom for few hours (can skip this step if you use fresh mushroom)

2. soak korean glass noodle for few hours

3. slice carrot, onion, mushroom...............keep mushroom water for later use

4. beat egg and add a pinch of salt................pan fry it in thin sheet............slice it

5. add in oil and stir fry the garlic until fragrant

6. add in carrots and dried mushroom.............later add in some of the dried mushroom water

7. at last add in onion..........after done, put them into a plate for later use.............add a tiny bit of sesame oil and mix well

8. boil up water and add in some soy sauce

9. when boiled, add in softened glass noodle............until it is totally soft

10. take out the hot glass noodle and soak/ rinse it with cold/ ambient temperature water immediately............you may need to repeat this step until the glass noodle is cool down

11. drain glass noodle............if your glass noodle is easily stick together...........you may add some sesame oil and mix well (provide kind of insulation for each glass noodle)

12. use remaining water and blanch the spinach

13. squeeze water out of spinach

14. add in little sesame oil and mix well

15. pour remaining mushroom water into the pan.............hit up and add beef marinate sauce, soy sauce, oyster sauce, mirin, sugar.........mix well

16. put in glass noodle...........let the seasoning sauce time to soak in

17. when seasoning sauce almost dry out............add in all pan fried ingredients

18. done and plating.............add in egg slices and then sprinkle sesame seeds

taste
-when serve, add in sweet chilli red pepper paste sauce to give it a little spicy, sweet and subtle wine sweet note
-taste a lot better than last attempt (glass noodle not enough seasoning, taste too light)
-texture of each ingredient is right (i dun like my food too soft)

areas of improvement
-i am very satisfied with this 2nd attempt
-add little red bell pepper into the dish as suggested in the above korean you tube video clip
