introduction
- it is kind of premium dish because dried scallop can be expensive (depend on country of origin, grading and size)
main ingredients
- broccoli
- dried scallop (from japan) <-- may not be so easy to find here
- oyster sauce
- salt
- shaohsing chinese cooking rice wine (made in taiwan)
steps
1. soak 2 dried scallop in hot water until soft (will take few hours)
2. slices dried scallop by hand
4. stir fry the stem part first coz much stiffer
5. stir fry in high heat
6. cover the lid ~2 mins (sorry, i dun have a fit sized lid lol)................if you like soft broccoli, then cook longer.............add in sliced dried scallop...,.........later add oyster sauce + touch of salt................before switch off the heat..............sprinkle ~2 teaspoons of shaohsing rice wine
7. done, platingtaste
-dried scallop is very sweet (perhaps aided by oyster sauce).............the aroma of shaohsing rice wine is impeccable............complex, deeper taste with a strong note of sweetness

areas of improvement
-prefer a better texture broccoli...........will shorten the cooking time a bit to improve crunchiness next time
