- fermented black beans sauce is a popular sauce for hong kong dishes
- it gives the dish an appealing savory taste.............it goes well with a variety of ingredients such as seafood and bitter gourd
main ingredients
- lobster tails
- bell pepper
- red onion
- fermented black beans sauce
- chili & garlic sauce
- oyster sauce
- garlic
- shallot
- salt
- shaohsing chinese cooking rice wine (made in taiwan)
steps
1. defrost lobster tails
2. cut them into pieces..............slightly wash away the broken bits of shell if any in the flesh............strain it
4. cut red onion, bell pepper into wedges.............diced garlic and shallot
5. prepare the sauce : diced garlic, shallot, fermented black beans sauce, chili & garlic sauce
4. season the lobster with pinch of salt, white pepper powder and thinly coated with cornstarch
5. heat up the pan until very hot...................add oil...............in high heat............put in lobster tails............let the shell side down..........stay for ~40"..............then flip to flesh side down.............stay for ~40"
5. when the lobster is slightly shrink/ folded............almost 80% cooked............take out from the pan
6. put in bell pepper and red onion (high heat)..............stir fried for ~30"...........tune down the heat.............then add in sauce mix.............till smell the strong fragrance
7. tune up the heat............then add cooked lobster tail...........stir well
8. add shaohsing wine
9. add oyster sauce (if you prefer strong taste, can additionally add some soy sauce and sugar)
